Why make this quick olive oil recipe? According to Health.com, tomatoes are a great source of nutrients your body needs. With only four other ingredients, including extra-virgin olive oil, also very high in anti-oxidants and polyphenols, you can't go wrong making this as an appetizer.
3 ripe medium tomatoes
1/8th cup finely chopped red onion
1-2 Tbsp. chopped fresh basil
1 Tbsp. EVOO
1 tsp. Balsamic
Rough chop tomatoes. Place tomatoes and juice in bowl;
Finely chop red onion. Place in same bowl.
Toss with EVOO and Balsamic.
Add basil and stir in.
Serve with slices of warm, fresh bread; voila, quick appetizer!
